Finally, local food truck Empanada Shack announced its return on social media. The business closed last month when the truck was stolen shortly before Christmas 2023.
Empanada Shack’s owner, Julio Vidal, said he had plans to acquire a second truck for events but had to move up that date when the first truck was stolen.
“As far as that process, it was fairly easy because we already had it on the way,” Vidal said. “Of course, everything else was hard. … Not having the income, not serving our people, our regular customers for two months, that hurt more than anything.”
The truck is normally parked at the Exxon Gas Station at 701 S. Buncombe Road and serves Latin American fare. It is slated to return in March with exciting menu updates and more empanadas.
